Cupcakes? Yes Please!



These note cards give us the munchies! They were delivered to the office today and we were really excited to see that there is a cupcake recipe on the back cover of each card- how scrumptious!! In fact, here is the recipe for the Fresh Fruit Cupcakes (image above):
2 Eggs
60 g sugar
1 teaspoon vanilla essence
90g all purpose flour
180ml double cream
250g fresh summer berries (strawberries, blueberries, raspberries, red currants)
icing sugar for dusting
Preheat the oven to 180 celsius
Line cupcake pan with paper cases
Put eggs and sugar in a large bowl and whisk for 10 minutes until thick and pale.
Add vanilla extract
Sift flour into a separate bowl twice, then sift into the egg mixture and fold in.
Spoon mixture into paper cases and bake for 12 minutes until risen and golden and skewer inserted in centre comes out clean.
Transfer to a wire rack to cool.
Whip the cream until it stands in peaks, then swirl over the cakes. Top with fresh berries, dust with icing sugar and serve immediately

My husband has a fad on making cupcakes at the moment, much to my delight.
